We had people over Friday night for an Ugly Sweater Christmas Party, which meant I spent the day in the kitchen preparing food – with great pleasure! I’m the only one in my family who eats hummus, but I was counting on some of our guests liking it too. Any excuse to blitz some garbanzo beans…
I beamed with pride as people complimented the hummus. Silly, I know, but I always get so much grief from ALL THREE boys when I make it for myself at home. That smells! Hummus is gross! Even the word ‘hummus’ sounds gross. And so on. After the third compliment Friday night, I turned to Chuck and said, “Did you HEAR THAT? What do YOU know about HUMMUS!”
So here’s my hummus recipe for all the non-haters.
Easy Hummus
2 cans organic garbanzo beans, drained
1 clove of garlic, smashed
1/2 teaspoon kosher salt
a few twists of freshly ground pepper
1/4 teaspoon sesame oil
1/2 cup diced roasted red pepper with a little oil from the jar (optional, but really yummy)
Approximately 1/2 cup extra-virgin olive oil
In a food processor, combine the garbanzo beans, garlic, salt, pepper, sesame oil and peppers. As you blitz it, stream in the olive oil until the hummus reaches a nice consistency. You might need more than 1/2 a cup. It just depends on how chunky or smooth you want it. I prefer smoother hummus, so I might use a little more. Serve with cut veggies!
